In general our daughter has a problem eating anything that may possibly have been of plant origin. Avocado’s have been a particular food hate of hers even though the rest of the family can’t get enough of them.
So when she spent over an hour savouring this super healthy chocolate avocado pudding, her brother, mum and I couldn’t stop laughing. After she found out she’d eaten avocado she was really quite proud of herself, so it was a win all round.
- 1 ripe avocado
- 1 tablespoon of raw cacao
- 1/2 teaspoon of vanilla extract
- pinch of salt
- 1 tablespoon of honey, stevia or agave syrup to sweeten
Blend all of the ingredients with a hand blender, dish into four bowls and serve.
