Eggy ‘muffin’ cups

Fit KidsYou know how we like our quick and healthy snacks.

An old magazine recipe inspired these – our own variation of egg ‘muffins’ that can be whipped up in under 1 minute (excluding cooking time).  They’re really handy for keeping in the fridge to be thrown into lunch boxes or popped into hungry mouths at will.


  • 2 beaten eggs
  • 1 tub (250g) of chunky cottage cheese
  • 1 cup (250ml) of grated cheddar cheese
  • optional – 1/2 to 3/4 cup of filling, chopped quite finely.  Try one or a combo of these:
    • red pepper
    • onion
    • fried and drained mushroom
    • fried and drained courgettes
    • spinach
    • bacon
    • fig & blue cheese


  • Whisk the eggs in a large bowl
  • Stir in all the other ingredients
  • Spoon into a muffin tray
  • Bake at 160C for about 20 minutes
  • Makes 10 large muffins or 20 mini muffins
