Healthy snacks: Chocolate coconut date bars

Choc coconut date barsI wouldn’t call myself fanatical about clean eating – hey we all enjoy a little junk food once in a while!  But I’m definitely aware of how what we eat can affect our mood, productivity, energy levels and well-being.

Always on the look-out for decent quick snack and lunch box ideas, this post is the first in a series of healthy snack ideas my family and I have tried and enjoyed.

These are so easy I can make them myself!

No-bake Chocolate coconut date bars


  • Nonstick cooking spray

  • 2 cups pitted dates

  • ¾ cup raw cacao powder (or the normal cocoa powder you’re used to)

  • 1 cup desiccated coconut

  • ¼ cup cacao nibs (or chocolate chips which will be more accessible but less healthy!)

  • 2 tablespoons of honey or agave syrup

  • teaspoon salt


  • Spray a 20cm baking tin or dish with cooking spray, and line it with baking paper

  • Keep about a quarter of the coconut aside to sprinkle on top, then process all remaining ingredients in a food processor.  You may have to add a little water and keep scraping the sides down as it gets kind of sticky!

  • Press into the baking tin, sprinkle with coconut and set in the fridge.

Easy as that!  Enjoy.
